The first time I heard about a “massaged kale” salad, I didn’t believe it to be true. What do you do? Massage the kale?
Yes, in fact, that’s exactly what you do. De-stem it, chop it and massage. Kale – in it’s many varieties – is a tough, leafy green that is packed with nutrients. Eating it raw can be an unpleasant and bitter experience. When it’s used in a recipe, it’s often manipulated so that is becomes softer and easier to eat. Massaging is one way to do that. While it seems, and quite possibly is, laughable, it really helps soften the kale for salads!
Besides massaged kale, this salad is super easy to put together. I picked up grilled tofu and an already-made Thai dressing at the market so it was just a matter of putting it all together, making it a very easy weeknight dinner recipe. 1 bunch red kale
1 tsp. olive oil
pinch of salt
1/2 red pepper, julienned
1/2 yellow pepper, julienned
2 scallions, chopped
1/4 cup edamame
1/8 cup unsalted peanuts
1/2 lb. grilled tofu (or one package firm tofu)
Thai salad dressing
- De-stem and chop kale. Drizzle oil over kale and sprinkle a pinch of salt. Massage kale for 3-5 minutes until it feels slightly wilted and soft
- Add all other ingredients. (If you are grilling your own tofu: press your tofu by wrapping it in a paper towel and placing something heavy on top of it to press out the water. Cut tofu into strips. Marinate in marinade of your choice – you could even use the salad dressing. Add to grill or panini press and grill until done.) Toss with dressing.
