I have tried on many failed occasions to make granola bars. For whatever reason, I just haven’t been able to get the ingredients to maintain a cohesive form. Even after baking they usually crumble into something resembling granola. But the time has come. I finally made granola bars that seem more like homemade Clif bars. They are substantial and delicious; great breakfast, snack or post-work out nosh. The mix-in’s are also very versatile. Cranberries and pecans or just chocolate chips or even just plain!

2.5 cups old-fashioned rolled oats (not instant)
1/4 cup dark brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 cup almond milk (regular or soy milk would be fine)
1 large egg
2 large very ripe bananas, mashed
1/3 cup creamy peanut butter
1 cup of mix-in’s (1/2 cup chocolate chips and 1/2 cup pecans, cranberries, walnuts, etc. make up your own!)
Preheat oven to 350. Grease 8 x 8 pan w/ butter & set aside.
1. Mix together oats, brown sugar, baking powder, salt, and cinnamon.
2. Add in the milk, vanilla, and egg. Mix together until evenly combined. Add mashed bananas, peanut butter, and 1 cup of mix-in’s. Stir well.
3.Pour the mixture into the pan and bake for 20 minutes. Cut into bars and enjoy!
