Jeremy’s Garlic Hummus

Sometimes I buy chickpeas with plans to make hummus or salad, and other times I’m inspired by a recipe first and then get the beans. This time it was the latter. My older brother Jeremy posted a delicious looking recipe on Facebook and the next day I ran out and got the key ingredients. Just a quick note about Jeremy’s cooking: it’s always so good. He’s the kind of cook who can take ingredients, play it by ear and the dish turns out delicious everytime! And this hummus was no exception: it’s delicious, savory and very garlicky hummus recipe. After I made it, he suggested reducing the number of garlic cloves, but if you like garlic — keep it as is! Thanks Jeremy, this was a hit!

jeremy’s hummus

2 cans organic chickpeas, rinsed and drained
2-4 squeezed lemons
5 cloves garlic
salt, pepper and italian herbs
1 generous T. pesto
3/4 cup olive oil
1/8 cup water

1. Put all the ingredients except the oil and water in a food process and pulse until everything is combined. Add olive oil and water as the processor is running and run until you get the desired consistency. Serve with pita chips, blue chips or spread as a shmear.
