Plain hummus is good, but when you start adding ingredients like roasted garlic or roasted red pepper or sun dried tomatoes, then you can really get creative. The simple and necessary ingredients of hummus — chickpeas, garlic, lemon juice and olive oil — lend themselves to be toyed with and altered to suit your hummus needs at the time. In this case, I had a jar of sun-dried tomatoes in the fridge and used some of the oil they’re stored in to create a stronger flavor. Enjoy with pita, pita chips, blue chips or any other dipping “utencil.”

Ingredients
1 can drained and rinsed chickpeas
4-5 T. sun-dried tomatoes, in oil, sliced thin
2 tsp. dried parsley
2 T. olive oil
3 T. minced garlic
2 T. lemon juice
pinch of red pepper flakes
Directions
1. Combine all the ingredients in a food processor and process until smooth. Taste hummus and see if it needs any extra spice, garlic, sun-dried tomatoes, etc. If the consistency is too thick, add a little bit of water, process and taste again.
