Avocado Cheesecake

Yes you read that correctly. Say it with me: Avocado-Cheesecake. Now pick up your fork and dig in! I made my own graham cracker crust but would like to find a better recipe. If you have one, pass it along!



    1 8 oz. package cream cheese, room temperature
    2 avocados, peeled, pitted and chopped into chunks
    3-4 strips of lemon peel
    1/2 cup sour cream
    1 package of instant vanilla pudding mix

    1 1/4 cup crushed graham crackers
    2 T. sugar
    3 T. butter, melted

    2 cups strawberries, hulled and quartered
    1/4 cup water
    3 T. sugar
    1 T. lemon juice

    Preheat oven to 350
    1. Pour graham crackers into a ziploc bag and crush with rolling pin so the crackers turn to very fine crumbs. Pour into medium sized bowl.
    2. Add butter and sugar and mix.
    3. Line bottom of spring form pan with parchment paper. Place graham cracker crust on bottom, pressing down lightly with your fingertips. Cook in over for 7-10 minutes. Remove from oven and cool completely.

    1. Combine avocado, cream cheese, sour cream and lemon peel in a food processor and pulse until smooth.
    2. Add vanilla pudding mix and pulse until combined.
    3. Pour mix into spring form pan and refrigerate for several hours or overnight.

strawberry coulis

    1. Put all ingredients in a clean food processor and run for about 20 seconds. Mixture should be smooth. Pour into bowl, cover and refrigerate until ready to use.

Voila! Pour some coulis on a plate, cut yourself a slice and add some whipped cream!

Post-baking thoughts: I mentioned I’m on the look out for a new graham cracker crust recipe. But I would also recommend doubling or even tripling the recipe so you get a nice thick cheesecake! And of course, I would use sour cream next time (if you don’t get this, watch the video).
