I meant to use three cans of northern white beans for an asparagus and white bean matzo ball soup. But once I added the veggies and matzo balls the beans felt like too much. However, I still had cans of white beans in my cabinet and needed to do something with them!
Lesson learned: When life hands you beans, make bean dip.

Ingredients
1 can northern white beans, drained and rinsed
4 scallions, diced
2 garlic gloves, diced
1-2 T. lemon juice
salt and pepper to taste
2 T. olive oil, and more as needed
Directions
1. Combine all ingredients in a food processor. Pulse until combined but textured.
Voila! How easy was that?!
they are also awesome pureed with olive oil, garlic, and parsley… and served in a little carafe like fancy restaurant butter!
