St. Patrick’s Day Minty Fudge Brownies

Happy St. Patrick’s Day! I’m not Irish, but you can kiss me if you want to. I’ve posted on these brownies before so yes, this is a repost with only minor updates. However, they’re fudgy, they’re good and they have a green frosting so they’re part of the celebration!

Ingredients
for the brownie:

    1 cup all-purpose flour
    1/2 tsp. salt.
    1 cup granulated sugar
    2 eggs
    1/4 cup melted butter
    2 T. water
    1 tsp. vanilla extract
    2 cups chocolate syrup

for the mint layer:

    2 cups powdered sugar
    1/4 cup melted butter
    3 T. milk
    1/2 tsp. peppermint extract
    2 drops green food coloring

for the chocolate glaze

    3/4 cup semi-sweet chocolate chips
    3 T. melted butter/margarine

Directions
1. Preheat over to 350
2. In small bowl mix flour and salt.
3. In separate medium sized bowl, mix sugar, egg, butter, water, vanilla extract, eggs and syrup, until smooth.
4. Fold flour mixture into chocolate syrup mix. Pour batter into greased glass baking dish (recommended size: 13×9)
5. Bake for 20-25 minutes, or until a wooden toothpick can be inserted in the middle and come out clean. Cool completely.
NOTE: In honor of St. Patrick’s Day, I put the chocolate layer first, then the mint so it would be green on top. However, the original recipe calls for the mint layer to go first, then the chocolate layer. Your call.
6. The chocolate glaze:

    combine chocolate chips and butter in small bowl. Microwave together for 1 minute or until melted. Mix well until smooth. Let mixture cool before spreading gently over the batter.

7. The mint layer:

    in medium bowl, mix powdered sugar, butter, milk, peppermint extract and food coloring. Spread mint mixture over chocolate layer.

Can be served with a side of fresh strawberries and glass of cold milk.

Post-baking thoughts: I only had Hershey’s syrup in my cabinet when I decided last minute this morning to make these. However, next time I’ll come prepared with dark chocolate sauce in which to enhance the fudgy factor of these brownies.

    This is just like something James’s Grandma G. makes every year…the green minty frosting on brownies! So good!
