Grilled Nectarines


Feast your eyes on this! These after dinner treats are a perfect way to ring in the spring season. The nectarines were a little less than ripe, but after 2-3 minutes on the panini machine, a sprinkle of bourbon and sugar, the natural sweetness popped!

2 nectarines, quartered
1-2 tsp bourbon
2 tsp sugar

1. Sprinkle sliced nectarines with bourbon
2. Place on preheated grill, close cover if using a panini machine so both sides get some heat. Grill for 2-4 minutes, or until grill lines begin to appear on fruit.
3. Remove slices from machine and sprinkle slices with sugar while slices are still hot

Voila! Add a dollop of vanilla ice cream or eat just plain!

Post-baking thoughts: You could use an outdoor grill too, but since we don’t have one, our panini machine worked like a dream. I’ve also heard of grilled pears, peaches and pineapple – give it a shot and let me know how it turns out!
