These delightful little finger candies are really good, really easy to make and are gone really quickly. The first time I encountered these tiny “potatoes” was at a St. Patrick’s Day Party. However, I made these last Sunday for the Super Bowl since they also resemble the shape and color of a football.

Ingredients
1/4 cup butter, softened
4 oz. cream cheese, softened
1 tsp. vanilla extract
2 cups confectioners’ sugar
2 flaked coconut
Ground cinnamon as needed for rolling “potatoes”
Directions
1. Cream together the butter and cream cheese in a large bowl.
2. Beat in the vanilla and confectioners’ sugar, then mix in the coconut.
4. Roll mixture between hands to form 1 inch long “potatoes”
5. Roll balls in cinnamon and refrigerate until firm. Yields 30-40 “potatoes”
