So after I finished up all the remaining pumpkin pie filling to make the mini chocolate pumpkin pies, I still had about 6 cups of just graham cracker crust and mini chocolate chips. So I added pecans! This is the epitome of “one thing just led to another…”
1 1/2 packages graham crackers
1/4 cup sugar
5 T. butter
1 cup mini chocolate chips
1 cup chopped pecans
Preheat oven to 350
1. Crush graham crackers by placing crackers in a bag and smashing them to crumbs with bottle or hammer. Measure out 1 1/2 cups of the crumbs and pour into medium bowl. Add sugar. Add melted butter and mix.
2. Pour 2-3 T. graham cracker mix into muffin tin, pressing down to compact crust
3. Add 1-2 tsp. of mini chocolate chips over each crust. Add 1 T pecans on top of each cup. Bake 15-20 minutes.
Voila! Some random concoction that actually tastes pretty good — enjoy!
