Do you think that’s a long enough title?
This is a two-bowl wonder treat! I’m glad this was the third and final recipe of the weekend cook-off since it turned out to be the easiest, not to mention delicious!

1 cup rolled oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips
1/2 cup unsweetened shredded coconut
1/4 cup chopped pecans
1/4 tsp. baking powder
1/4 tsp. salt
5 T unsalted butter, melted and slightly cooled
1 tsp. vanilla
Preheat oven to 350. Grease 8×8 baking dish
1. Combine all the dry ingredients (oats through salt) in a large bowl.
2. In a smaller bowl, mix together the melted butter, egg and vanilla. Dump the wet ingredients into the dry and mix until well blended.
3. Pour mixture into baking dish, press down ensuring mixture covers entire dish
4. Bake for 20-25 minutes or until golden brown on top.
Post-baking thoughts: These are very dense and on first bite they seem a bit dry. But don’t give up! Go for the second bite and then you realize, they aren’t dry, thank goodness for the chocolate chips! The squares aren’t sweet like a cupcake, they have a deep, rich flavor that changes as you chew. That being said, next time I would be curious to cook them for 5 minutes less. However, if you find these to still be too dense and/or dry for your taste, I suggest sprinkling the square with a flicker of water and heat in the microwave for about 10 seconds.
